Botvinya, a cold soup
This is an ancient cold soup made with young beets, at least in summer, and kvass .
Use nettles, spinach, spring onion and other garden herbs. Whatever you can find or whatever grows. It is basically a cold soup for the fasting period. And of course even better on a hot summer's day.
If you do the soup during summer and you use young beets,with leaves, no need to peel and boil them. Just use them uncooked, with all the leaves and -stalks-.
Traditionally, it is served with dark bread and salmon, but it’s also good without them.
Recipe (for 4 persons):
4 boiled eggs, 4 boiled beets, 2 cucumbers, 200 gr of spring onion, 200 gr of beet leaves, 200 gr of radishes, 70 gr of spinach (or lettuce or nettles ), 4 cups of kvass. If you don't like the bread kv**** you can of course also - white -Kvass. Special good the variation with horseradish flavor.
Chop the ingredients well. The spinach should be chopped very fine. Mix the ingredients and add kvass.
Serve with sour cream, dark bread and slices of smoked fish.
