though the atricle is interesting to read. my mother in law made it from her mother and most probably she got it from her mother... these things are nurtured, cared for, fuffed over like they are little kids. they need to -eat-. sugar has to be added. how much? I have no ideaa. apparently this goes by temperature, weather and whatever other mysterious factors. but the endproduct is always nice. a little bit sour. like lemon tea. and now it is Kombucha.
