so tired from work u cant even pull your leg to hang on the sofa taBle?and u want to eat something new to to your taste but dont have time to cook or you just cant?
well here it is!!! il cook for u.asian dishes,some italian,spicy,sweet,unique or sizzling plate of something!!! or some good invention for beverages..salads..:book::coffee:

Olivier is exceptionally disgusting, but even more so is this beetroot salad with walnuts, garlic, prunes and mayo...YIKS!!!

handmade Pelmeni,Salad with tomatoes, red Onions, cucumbers, ( all small cubes) Coriander finely chopped, a little Apple cider Vinegar and some Pumpkinseed Oil.

...a handful of green leafs (faaaget trashy iceberg), baked beetroots, peeled and cubed, chopped hard boiled egg (anybody, unable to cook an egg without getting yolk green should be banned from the kitchen), a sprinkle of pine nuts. Dressing, olive oil + couple of teaspoons of capers = warm in a pan until delightful first firework:-))

Or


A fig+ a slice of chevre+ honey, balsamico + black pepper = into the oven, until the cheese gets slightly runny and warm. A few fresh nasturtium (indiankrasse?) seeds or flowers are optional.

cool.i will share my version of chicken adobo.this is my fave fast cook dinner food.

1/2 kl chicken wings/or legs
garlic
apple vinegar or any kind
2 pcs laurel
soy sauce
black pepper
2 pc red chili

prepare the ingredients.marinate the chicken wings with all the ingredients and then simmer and put in pan and simmer for 15-20 mins.when its ready,serve.
prepare your fried rice,simplicity is the best .just fried some gaRLIC AND THen fried the rice for 5 mins.toppled with 1 or 2 eggs.

keeping it going is another one. there are plenty of empty places in town, even out here in Strogino there is a nice one.( ex casino, closed down over 3 years ago, no takers so far) biggest problem is the rent. the landlords/owners/ ask unreasonable high rents. they think well people have to wat every day, they go and check out other restaurants ( chains) and make deductions. thinking THEIR place will make them rich over night and then for years to come. I have seen so many nice places, just close down after a few short month, hearing after some time it was the rent that was killing them. also very dangerous if /when there are three or four partners. each one has his/her own ideas how the place should be run, and then are still friends and family who wanted to be invited for free and come and eat and drink. does not work like that unfortunately.
Authorities, like fire dept, police ,licens are not that bad, one can deal with them.
If i still havn't changed your mind?

You forget one thing, protection money, i remember this in St. Petersburg.

or anyone has a big kitchen at home? to rent a place will cost about 10 000 rubles a day. quiet place,no worry about -krisha- and the like.
online is fine, but what about delivery? a good thing would be for instance (we did it when working for a big company) lunch and dinner(?) for a big office. we were working 7 days a week. friday we made a plan for next week, got choice of 3 salads, 3 soups, 3 meat/fish, some dessert and a vegetarian. everyone made the choice, food was delivered all week long cold. because we all were eating at different times. to heat up then in the micro. food was nice NOT kotletti and kascha.

Search out a place wit hHUGE office buildings and find out if there would be a demand and how much they would be prepared to pay. BEGOVAYA next to the Metro has some 3000 offices.These huge building(s).

Offering online? maybe yes, but is it worth to have clients all over the place? we all know the traffic situation in Moscow. And is it worth to have one client in ,lets say Strogino, the other one in Yugo Zapadna? And where is the kitchen? In Chisty Prudy?

These are just a few thoughts.Not trying to discourage anyone.

In Indonesia, the most popular soup was Mie Kocok Bandung. ( i was Chef there for one contract). easy to make.

Beef stock made from cow's feet (can be found at Auchan). Asia nstyle instant egg noodles. spices and an egg.

what i wanted to say in my reply that it was NOT -cucina sovietica- as you put it so nice. But good wholesome food, well cooked and prepared.
no greasy fried potatoes
no -myasa po franzosky-
no olivier and the like.
no ragout or goulash with bits of meat where you don't know did it bark, moo, grunt or maybe fly.

a small pice of shitty, cheap meat, beaten to hell so it appears bigger, covered with/and/or fried onions/tomatoes/ mushrooms/ white sauce and cheese. lots of sauce and -other- ingredients, less meat. but with all the sauce and cheese it will look bigger and smells nice and tasty. then you start digging for the meat... and not much is there.

I think i will start a saté restaurant with all kind of saté from chinees up till caribean saté its easy and simpel food with fresh bread or other things and very teasty

Once you've mentioned Caribbean, may I suggest a roti shop? It's basically bliny with various curried fillings. Fast food and cheap, too.

Damn, I miss a roti shack in Suncrest Crest!!!

For salad i have my own recept green fresh salad with tomatoes, appel, union and a good dressing from mayonaise, mustard en honing.

Once you've mentioned Caribbean, may I suggest a roti shop? It's basically bliny with various curried fillings. Fast food and cheap, too.

Damn, I miss a roti shack in Suncrest Crest!!!
Roti the real one is not easy to make, special the pancakes is very difficult.
And don't forget the special things you need like madam chenet, kouseband, ketjap, sweetpatatoes and spices for the chicken.
The origanal Roti is coming from Suriname, where also is coming from the Bakeljauw (rice and smoked fish).
For about 10 years ago, i has a restaurant in Holland where we make all special food from everywhere.
From
Russia - Brosh
Germany - Sweinenackse
England - Fish and chips
Hongarian- Goulash
Holland - Erwtensoep/Snert
Belgium - Cargot
Amerika - Hamburger
And of course our own specialitie's

because satay is an Indonesian dish.
getting fancy ingredients is not problem here in moscow, there are enough -Asia- shops and importers where you can get any product if the quantity is commercially viable and you are prepared to pay the price. and then the customers must also be prepared to pay the price for a product.
However one must/should never forget in the end you cater to russian guests. And they might try something new and exotic for 2 or 3 times and then go back to -i want pelmeni and Borscht- and the old standby -greek salad- which has nothing to do with greek salad, meaning the junk that is being peddled here as greek salad.
We all go on vacation to exotic places, see and eat the local food there (most of the time not because -yikes it has eyes and legs and still wiggles!!!). And then are looking for that also in Moscow.
Satay would go but only for take away, somewhere near a big park, where people can sit down under the trees. or take away for home. (and then for sure someone will want to know why -we- do no shashlik from greasy and fat lamb...)
Chinese Wonton would be a good idea. But do it as in Hongkong. No menu. But -servers- drive through the restaurant with their steaming carts and you order right their off the cart. On the table is the bill and food is just added on you pay at the end. In HK these restaurants are huge, noisy as hell, you can't be squeamish either when watching the -locals- eating, but the food is good, cheap and it is fun to eat there.
( and soon enough someone will want to have ketchup or sour cream and
-why no pelmeni?-)

A Viennese Cafe, center piece a big espresso machine with REAL Austrian pasties, not there red and green and blue colored cakes and small, wilting fruit tartlets. ADJACENT A SMALL BAKERY that does fresh bread. ( while i should not write like that, there is no need to invest in a bakery. there are companies that have perfect frozen products FROM AUSTRIA, can be baked on the premises. and will not be different than self made. I have worked with that product).
And make something that NO ONE is doing here. We all have seen Kommissar Rex. make bread rolls, salty sticks, Weckerl, filled with good quality cold cuts, sausages and the like. Any one been to Vienna, or next time, check out the ANKER bakeries. And you see, they are NEVER empty.
But these places must be on the ground floor, huge vitrinas for a quick take away sale. AND GOOD COFFEE. and NEVER make pelmeni, cheburiki and the like, just in order to please the few guests who want them...


These are just a few ideas....

latte is just a fancy name for Granny's coffee with milk.

Most Espressi are not worth their name, cheap coffee beans, wrongly roasted and/or ground, coffee machine, seldom if ever cleaned. often also no filters on the machine. all that affects the water, taste and quality.
good coffee should be

hot as hell
dark as the night
sweet as love

now show me where you find that in Moscow.

if you do not want to strong coffee because you drink a lot ( as i do) get a good French Press, 8 gr good coffee per portion, pour over fresh boiling water, from a CLEAN -chainik-, filtered water, can be from the tap, and fresh coffee either beans ground fresh or ground coffee ( but once opened stored in a good tight container) and THAT will be good coffee.
And don't let it stand for to long, max 30 minutes, or all the flavor is gone and you have brown hot water.
which beans or coffee?
Either buy at the supermarket -your- brand that you know and are happy with or go to -Koffee Kantata- and they will advise you what you want.
i personally use Julius Meinl -King Hadhramaut- since many years. This is my taste and i drink about 8 or nine mugs during a 14h day...
