1.no, i rather stay with my feet on terra firma
2. mopani worms in hot chilli sauce, in south africa. braised sinew from the hind leg of a deer, in china,tasted actually quite nice, only the description is a little bit aquard.thinly frozen reindeed meat,carpacco with a more fancy name, when working in siberia.
3. summer of course, and warm and sunshine, makes one wonder why i am here. on the moscva river we still have 50 cm ice, from where i can see it.

1.does one EVER know the real color of a woman's ahir. my wife is a stylist...
2.every man has fantasies, that's why playboy and penthouse is so successfull. and i also have, rolling in bed with two eurasian girls,by far the most beatifull women, and i worked many years in asia.... and no, it did not work out.
3. if that counts, when i was a 1st year chefs apprentice, we tried to sow each other who can squirt farther, but actual sex,no.
4.Movenpick, the best. and when working in china, we had ice cream from sour milk or kefir, a dream, never seen since.

the casinos, officially, are all closed, the spenders have left and so had all the expats. i am back in Moscow now.
AMsterdam was super, but far to pricy, the usbek restaurant was one of 'ours' the chef there amda a super plov and excellent shashlik.
all gone now. the hotel owner has taken back the restaurant, gone down to the dogs.
the next six month i will be on a ship, the tichy don, going back and forwards moscow-st.pete, 11 times.

1.where i grew up, a littel village called Krobathen,in Carinthia, about 20 km out of Klagenfurt the provinces capital, still
has no shop,no butcher or baker,no church but 2 gasthauses (pubs..)
2.Russia,i liked siberia very much, was there only in summer, amazing place and people.
Moscow: Strogino,where we live, a huge park across the road, some 1000 or 10 000 ha, don't know, can walk the dog, in summer the grass is so high, can sunbath in the nude, no serebrany bor with zillions of people there.
3. indeed i do for good results ut i am also not afraid to go out whe na guest comlains, even i still do make mistakes. but i nthe end, most of the time, we have a vodka,and part as friends, and most important, the guest WILL return once more.
4. my wife is an excellent cook and also cooks at home. after all, most of the time i am not at home at lunch or dinner time. but she cooks differently good. she cooks russian food at home and i cook my style, and we all enjoy a good meal. or just a light snack.
5. we plan to be around for awhile, but we are not averse, in our 'old age' to move to a warmer place, and that does not exclude overseas but also can be 'Sotchi'.

and this is no plug for them but i like kroshka kartoshka they make nice baked potatoes and i like their fillings. and since i am not on a diat or so, i splurge, at least four or five extras...

being Austrian of course any good sausage is the key to my heart. sauerkraut is not needed, but a good mustard and good dark bread. and a zipfer beer.

i eat a good breakfast, as it is supposed to be, still at home,coffee, a piece of dark bread, some cheese, a yogurt, i make them myself. i am not a friend of eggs, fried or otherwise, once every two weeks is enough.
for lunch and dinner i have seldom time. but i try to sit down and have at least a salad. salad for me is leaves and greens, no mayo, no Olivier or vinaigrette.
evenings no more food, not for reasons of dieting, just i am not hungry. and i don't feel like. but when i am at home, some fruits, maybe another yogurt or some tomatoes and cucumbers.
i am not a particular health freak, no calorie counting. i just eat when and what i feel like. not lunch because it is noon or dinner because it is evening. even on my days off, it can happen that i just skip food a day or two. BUT i must have coffee, good, no plonk, and always with milk and sugar. 4 or 5 mugs a day.
alcohol in moderation. a glass of wine with good food or a beer.
in the evening i like a southern comfort with ginger ale. but the REAL one, still made with whiskey and peaches, not the other gunk. hard to find, not in Moscow and not in every duty free. so it is a real treat...
sweets, i am not to fond of, instead of all that gunky cream, rather a platter with sliced fruits or a nice, smelly, cheese.

sorry i am not in Moscow,have not been for several years. the provinces pay much better and QUALITY,KNOWLEDGE AND AGE are appreciated there. ( i am 60...)

all the big hotels do a good breakfast buffet, and in my opinion, the holiday inn chains, lots of business people there, are an excellent value for money.

Do many filipinos work as chefs in moscow?

not that i know, but the (river) ships are replacing russian staff, special
in the service, and where the guests are foreigners, with Filipinos. the Russians don't want to learn English and it is very hard to communicate with tourists.

how do russians learn to become a chef? 4 years apprenticeship?

they go to a college or trade school, come out full of theory but have no idea how to make a good demi glace or beef bullion. basically they are useless and you have to train them from day one.

what do you think of russian chefs?

most of them full of themselves, attitude stinks, know everything better, but are unwilling to learn. with very few exceptions. if they have worked with a foreign chef for a few years they change, but in the beginning it is very hard.

how much money can a run of the mill cooker make in moscow?

check out the 'HH' site, job offers are there, from cook to sous chef to chef.

how much money does a dishwasher make?
in moscow 10 to 15 000 rubles. but they all work 2 days on and 2 days off, so many of them have another job.

who is usually doing this sort of work, Uzbeks?

no, dishwashers are mostly elderly ladies, who hit you over the head with their wet, stinking rags if you try to interfere, or god forbid, try to teach them a better and correct way how to wash dishes. even if you have a dishwasher...

do you think that an uzbechka would be a good business in Austria?
doing what? washing dishes, for that we have plenty other people...

do the russians tip alot...
no they are mean, they don't appreciate good food and good service. no culture yet, all that still has to be learned.

are there any good hungarian resturants in moscow

not that i know of one

half the austrian cuisine COMES from Hungary, when it was still the k+k monarchy

how did you end up in moscow

i was working in Greece as a chef/teacher in a hotelschool. we were offered to come to Moscow during the summer break to open a restaurant, the ship Alexander Blok, if someone still remembers.
the contract was for 6 month, i am now 20 years here...

alot of questions, i wont be offended if you dont answer them all!

Very informative. I would never have thought that a chef could make more money in the provinces than in moscow...Maybe the villagers are a little smarter than the muscovites. I guess in the provinces, and maybe even in moscow, you would be a monopolist if you had a restaurant that serves good food

In general i think food in russia is pretty lousy, and it has a lot to do with the russian chefs, as you say, not wanting to learn. In russia if you go to a stolovka, they will be serving up the same old grechka golobsi and kotleti that they were serving up in the soviet times. You would think that in 50 years you could learn you to cook something new, especially if it is your job.

I was some time ago in Dubai, I noticed that chefs are usually from the philippines. I remember I went to TGI Fridays (a chain restaurant), and ordered some food. Out of interest i went to the Moscow TGI Fridays, and ordered the same dish - the fillipinos somehow managed to cook the same food better than the russians

at least in the places where i worked, i was hired specifically because i was not so young anymore and laso i could speak the lingo.i had also done additional training for the sanitation requirements, could go withe purchsaser to the local amrket and tell the difference from a young bul land an an old sausage cow. work is very ahrd and difficult, before they accept you, they try to get to you, to test yo uwhat yo uknow and how much you know, but once you have taken that hurdle it is fine. and most of all, NEVER have i been cheated out of my salary or some other 'left' things in the provinces, but plenty time in Moscow. From foreigners, 'friends', russians and other assorted cretins. if i could get back all the money that is still owed to me ( with interest...) i could nicely retire, and this is no joke.

the fat in a youn animal is white to ceamy white and firm to the touch. in an old cow it is yellow and your finger will sink into the fat if you dig in slightly.
young meat us bright red ( think of fire engine), old meat is dark red.

but you pay a price. BUT if you are friends and acquainted and a regular customer at ANY of the open markets meat stallholders, you might be surprised what they come up with. and of course you must know your cats, because friends or not, knowledge is better then disappointment...

since i did not come 'straight' from the west to Moscow, but via Africa, Asia, the USA and Southern Europe, there is nothing that can 'challenge' me here anymore.

What i do not like though and never will get used to it, is the unorganized way of the public transport. in Austria even for the busses and trams we have a timetable and you can be sure if it says 8.14, the bus or tram is there. and if not, due to an accident or other reason, at least in the bigger towns, each station or stop has a loud speaker, that tells you what is happening and any alternative (routes or transport).

- What do you enjoy the most in your profession?
- I don't know any cooks who made it to being a World Leader in politics. Yet, I think that cooks in general would be good political leaders, as their disposition is all about making people happy. Do you agree or disagree?
- What is the best market to get fresh food and the best herbs?
- After a long winter, soon I'm going to kick off the datsja season. Main ingredient is going to be, of course, the apple/onion/pepper marinated shashlik that they do wonderfully in Bykovo. What side-dish would pleasantly surprise my guests?

Some questions:

while i like to esperiment, in the end i want my guests to be able to see what they are eating without having to consult the mendeleev tables.
also i want to leave the restaurant happy and sated, NOT stuffed, and not having to go to a McD because they are still hungry.
and we all know, special russian diners, are very fickle, one moment yo uare in and after 6 month you are out with you fusion and molecular cuisine, but good, clean trafitional cooking will always have aplace.
as my signature says, and good fresh products, and yo uwill ahve happy clients for a long time to come.

- What do you enjoy the most in your profession?

i think the answere would be more appropriate, what did i enjoy most. i started young, left home when i was 22 and besides South America and down under i have worked all over the place. i am still in contact with guests, ex colegues or just friends and aquaintances. seeing the world also has told me and thought me to be tolerant towards the weakness and cultural habits of others. what might be 'normal' for 'us' might be totally not understood by us and the other way around.

yes indeed i do, because it would be much easier and definitely more enjoyable to discuss the worlds problems over a good steak and a nice glass of wine.

- What is the best market to get fresh food and the best herbs?

always good but pricey and they tend to cheat, Dorogomilovsky market, behind Kievskaya /Evropeisky shopping center. special if you do not know the language and products.
for herbs, any open market will do, for instance we ahve in Strogino, and every other rayon as well, the farmers market, lots of products not from the Moscow region, Lipetsk is big here, they can make double the money in one day, what they do back there in a week. the best and FIRST strawberries, freshest milk, yogurt made from 33% cream, fair enough for a price. because these little traders have to sell more or less in one day, cold storage over night is expensive, the prices there are hard to beat.

- After a long winter, soon I'm going to kick off the datsja season. Main ingredient is going to be, of course, the apple/onion/pepper marinated shashlik that they do wonderfully in Bykovo. What side-dish would pleasantly surprise my guests?

corn on the cob, a nice potato salad NOT with mayo,dangerous anyway out in the heat, baked potato, no one does it, everyone likes them, eggplant,whole, not peeled, salted ,pepper, garlic, little oil,wrapped in foil and baked on the side of the grill, the same with big WHITE onions.

that is the sixth of May.. and i was born i n1951 if that is of any interest.

when you look up wiki yo uget about 20 different explainations about the eggs benedikt, i did NOT invent them. to bad, i would have put o na patent and be rich by now...
and about underwear, i work in the kitchen and there it is ALWAYS hot, so if only for hygienic reasons, and also private, i always wear underwear, nothing is left to swing....

Small children can be very fussy about what they will eat and what they will not even taste....Do you have any tips for encouraging kids to eat a variety of foods?

make it interesting for them. let them help in the kitchen, even if it will be a mess the first few times. don't force them to eat something that they don't like, but also no stories like 'it is good for you, so eat it up'.let them eat what they like, but include the 'good' things. a cheeseburger does not need to be junk food, if you make it yourself, use good meat to make a patty, a good brown roll for the burger and salad and toamtoes and pickles. no gooey mayo, and leave out all these artificial sauces. and even spagetti bolognese, buy good spagetti, durum wheat, make the sauce yourself, don't add tons of parmesan and add a fresh salad. i know leaves are for 'rabbits' but buy some other varieties besides iceberg and lettuce. and make a nice salad with ruccola, corn and the like.


Should I heat a pan first before putting in the oil, or should I heat the oil and the pan together?

i put the pan on the plate, and then add the oil, putting a complete 'emty' pan on a hot plate, could lead to deforming of the pan, after a few times and pouring cold oil into a hot pan is inviting desaster.

it is not conidered 'manly' to crunch down o na celery stick, but a woman can do and suggest the most erotic things, just nibbeling on the green stalks.

a candle light dinner, or just some nice food, a warm shower, some champagen i nthe abth room, a good massage, the room should be warm and yo ushould be wearing no jewellery, nothing that can scratch or hurt and you do not need any celery, oysters, spanish fly, nutmeg, or any of the million concoctions that make only the producer and distributor rich.
