Have you asked John Warren (of sausage fame)? I don't know if he actually does it, but where I grew up they always put salptre in sausages.

I always understood that it was to keep the meat pink in sausages, does it influence the taste too?

Shatner - That is exactly what I'm going to make (only we Brits call it salt beef...for us corned beef is something originally Irish that is sold in a tin!).

It does indeed keep meat pink when curing it, it also guards the meat against harmful bacteria, particularly clostridium botulinum aka botulism!

Salt Peter? Read the title and had a basic training flashback. There's an urban legend in the services that the cooks would put salt peter in the food to curb your sexual "appetite."

Thanks DPG, it makes sense, in villages they would hardly have used it just so the meat would keep its colour, nor to curb their sexual cravings I'd say....

And, btw, yes, I DO know what saltpeter in ham serves to...

Look in the stores: here in Russia we've the same purity standards which accords to both agricultural and food-standards, AFAIK...

Saltpeter isn't sodium nitrate, it is potasium nitrate. In the US you can buy it at the drugstore/pharmacy. The only non-explosive use I knew for it was to treat chiggers. I asked a Russian pharmacist friend of mine and she told me that you can not get it in a Russian pharmacy. She suggested a garden shop.

I remember watching Judy Garland in "Meet Me in St. Louis" on ORT a few Christmases ago. At the beginning of the film, her father comes home from work to learn that what we call corned beef and cabbage is to be served for dinner.

The Russian translation ran roughly "Ah, Spam and cabbage! My favorite dish!" :vomit:

I think you are confusing saltpeter with bromide.:)

the meat delivery was here today (tuesday) and the yo-yo forgot the salt, it will come tomorrow or after tomorrow, i definitely will post you,
