Shrimp Creole (Cajun Dish)

1/2 pound fresh shrimp, peeled, deveined and washed
1/2 teaspoon sugar
1 bay leaf
1 small piece of bell pepper, cut fine
1/4 lemon
1/8 teaspoon sweet basil (if needed use dried basil)
1 - 1/2 cups water
pinch nutmeg
1 - 1/2 tablespoons cooking oil
1 small piece of bayleaf
1 small onion, chopped
1/8 teaspoon red pepper
1 clove garlic, mashed
1/2 teaspoon cornstarch
1 cup whole tomatoes, fresh or canned
A small amount of green onion
1/2 cup tomato sauce
Liquid from boiled shrimp

In a large pot, add water, salt, bay leaf, lemon and shrimp. Cook over medium flame. When water comes to a boil, cover and cook 5 minutes. Drain and reserve the liquid.
Saute onion and garlic in oil until light and tender. Add tomatoes, shrimp broth, sugar, and bell pepper, reduce the heat and simmer for 15 minutes. Add sweet basil, nutmeg, red pepper and salt to taste. Cook a few minutes more.
Make a paste with corn starch and 2 tablespoons water. Stir it into the sauce; stir and cook until it thickens. When ready to serve, add the boiled shrimp, parsley and green onion. Serve with cooked rice. You can add some Hot Sauce to this such as Tabsco which I always have on stock. Got have it hot.

Another Cajun dish: Cajun Shrimp Pasta

1 lb Large Shrimp, peeled and deveined
2 Tbs Olive oil
1/2 Chopped onion
1/2 tsp Thyme
1/2 tsp Cayenne pepper
1/2 tsp Black pepper
1/2 tsp Basil
1 Tbs Garlic, chopped
1 Tbs Worcestershire sauce
1/2 tsp Tabasco sauce (if you do not have, use another hot suace or PM me and I wil tell you how to mkae your own)
2 cups of Tomato, peeled and diced
2 Tbs Sugar
1/2 cup Green onions, chopped
3 cups of Chicken broth
1 lb Vermicelli or Linguine
1/2 cup Parmesan Cheese, grated

Saute' the onion in the olive oil for approximately four minutes. Add the garlic and stir, add the thyme, cayenne, black peppers, and basil. Cook at low flame for abput five min. Add everything else except for the pasta, Shrimp, and cheese, and cook over low flame for about 30 minutes or until the liquid is reduced. Don't over reduce.

Next saute' the shrimp in some butter and garlic until about 3/4's cooked (or very lightly pink). Now add the sauce and cook for an additional two minutes and then add the cooked pasta and toss well with the grated cheese.

An easy one:
Shrimp Stick:

1 Lb. 26-30 Count Shrimp
2 Sticks Butter
2 Medium ;emons
5 Each wooden skewers

Peel and devien the shrimp, in a saucepan, melt the butter and then add the juice of one of the lemons to it.

Place 6 to 8 shrimp on each skewer, keeping them close together. Place the skewers on a griddle and based them with the melted butter/lemon sauce. Turn them every minute or so and continue to baste them until they turn pink and are completely cooked.
Serve the remaining butter/lemon sauce and wedges of the lemon.
