From what I can see of you lot - you are fat enough already, so here is a method for low-fat roast potatoes.

Peel potatoes, then blanch them by plunging them into cold water and bringing to the boil.

Drain thoroughly, then lightly scratch the surface of each potato with a fork, and sprinkle lightly with salt. Place on a non-stick baking tray, without fat, in a moderate oven 200C, 400F for about 1-11/2 hours.

1lb of medium spuds + salt.

cut out the salt and you've something approaching healthy, very dull but healthy.
If you can't enjoy a good meal for the sake of it why bother.
