View Full Version : Ceviche (Quick and VERY easy!)

Love this stuff, especially in summer - full of protein, no carbs or fat.

500g cod, skinned and boned
500g salmon, skinned and boned
4 limes, juiced
2 cloves garlic, finely sliced
1 handful fresh coriander, chopped
Salt

Cut the fish into bite-sized chunks and put into an airtight container.
Pour over the lime juice, add the garlic and salt, and mix.
When all the fish is well coated, sprinkle over the coriander.
Cover and chill for at least two hours.

That's it!

You could also add a touch of orange juice for an extra dimension to the citrus flavour...

Serve with a salad (in the European sense of the word;)) and some warm bread.

Non-frozen...? Stockmanns all though it aint cheap.
